A buffet
Main protein: half a pound a head, so 15 lb for thirty. Two sides at a quarter pound each. Bread: one and a half rolls a head, because a third of the room takes two.
If there are two mains, do not halve both — people take some of each. Two thirds of a pound total across both is the working number.
A cookout
Burgers and sausages together: two and a half items a head. Grill vegetables first, before any meat touches the grates — it is the difference between a vegetarian eating and not.
Slaw and potato salad: a quarter pound each. Both are better made the day before.
Drinks and ice
Three drinks a head for the first two hours, then one an hour after that. Ice: two and a half pounds a head indoors, four and a half outdoors. Nobody has ever bought too much ice.
Put something non-alcoholic that is not water or cola in the same fridge, in the same glasses. A third of the room will be grateful.
